Kim's Tomato Basil Bisque

At this time of year soup is such a treat! It's warm, satisfying and somehow comforting. In addition, most soups are very nutritious! As promised, I am sharing some of Stumpjack's most popular recipes with you. Here is one of my favorite:

Kim's Tomato Basil Bisque

  • 2 (28 ounce) cans of crushed tomatoes
  • 2 Fresh Roma tomatoes
  • 2 (14.5 ounce) cans of chicken broth
  • 2 (11.5 ounce) cans of V-8 juice
  • 2 cups of heavy cream or half & half
  • 1/2 cup of butter
  • Fresh Basil leaves (1-2 packages)
  • 2 tbsp. sugar (optional)
  • Garlic Sea Salt
  • Ground black pepper
Directions:

In a large soup pot, combine the crushed tomatoes, chicken broth, and V-8 juice. Cut the fresh Roma tomatoes into pieces and place in your blender or food processor with a splash of cream just long enough to liquefy them and add to the soup pot. Bring it to a boil and simmer for 30 min. Then add the basil cut into small strips, cream, and butter. Stir until the butter is melted. Season as desired with the garlic sea salt and crushed black pepper. When served, garnish with grated Parmesan cheese. Enjoy!
